- 1 lb (450g) Chicken breast or thighs, cubed
- 1 cup Orzo pasta
- 2 cups Chicken broth
- 1 head Broccoli, cut into florets
- 2 tbsp Olive oil
- 3 tbsp Honey
- 2 tbsp Soy sauce
- 3 cloves Garlic, minced
- 1/4 cup Feta cheese, crumbled
Instructions
- Preheat your oven to 200°C (400°F). Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Roast for about 15 minutes.
- Cook the chicken in a skillet with remaining olive oil for 5-6 minutes until golden brown.
- Add minced garlic, honey, and soy sauce to the chicken and stir until it thickens into a glaze.
- Boil chicken broth in a saucepan and add the orzo. Simmer for 8-10 minutes until liquid is absorbed.
- Plate the orzo, top with chicken, broccoli, and sprinkle with feta cheese.
Notes
For additional flavor, marinate the chicken in honey, soy sauce, and garlic a day in advance. Customize with your favorite vegetables.
