Ingredients

  • 4 medium potatoes
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Chopped green onions or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the potatoes into bite-sized pieces and place them in a large bowl.
  3. Cut the chicken breasts into cubes and add to the bowl with the potatoes.
  4. Drizzle the olive oil over the chicken and potatoes, then mix well.
  5. Mix the barbecue sauce and honey in a separate bowl until smooth.
  6. Pour the mixture over the chicken and potatoes, stirring until evenly coated.
  7. Spread the mixture onto a baking sheet lined with parchment paper.
  8. Season with salt and pepper to taste.
  9. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender and golden.

Notes
