Description

Delicious and nutritious muffins made with ripe bananas and creamy peanut butter, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the mashed bananas, peanut butter, honey, Greek yogurt, egg, and vanilla until well combined.
  3. Whisk together the flour, baking soda, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in nuts or chocolate chips if desired.
  6. Divide the batter evenly among the muffin cups and bake for 18-20 minutes.
  7. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These muffins freeze well; just pull one out the night before to thaw. You can also make them in an air fryer at 320°F for 12-15 minutes.
