- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the mashed bananas, peanut butter, honey, Greek yogurt, egg, and vanilla until well combined.
- Whisk together the flour, baking soda, salt, and cinnamon in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in nuts or chocolate chips if desired.
- Divide the batter evenly among the muffin cups and bake for 18-20 minutes.
- Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These muffins freeze well; just pull one out the night before to thaw. You can also make them in an air fryer at 320°F for 12-15 minutes.
