Instructions
- Warm the skillet: Heat the olive oil in a large skillet over medium heat, allowing it to shimmer just slightly.
- Sauté the onions: Peel and finely chop the onion. Add it to the skillet and sauté until soft and translucent, about 3-4 minutes.
- Add garlic: Peel and mince the garlic cloves, then add them to the skillet. Cook for another 30 seconds until the garlic releases its fragrant aroma.
- Cook the turkey: Crumble the ground turkey into the skillet. Use your wooden spoon to break it up. Cook for 6-8 minutes, stirring occasionally, until it’s fully browned and there’s no lingering pink.
- Prep the zucchini: While the turkey cooks, wash the zucchinis. Trim their ends, cut them in half lengthwise, and slice into half-moon shapes about 1/4 inch thick.
- Combine ingredients: Add the sliced zucchini to the skillet. Stir it into the turkey mixture and cook for 4-5 minutes, letting the zucchini soften slightly but still retain some firmness.
- Season and simmer: Sprinkle dried oregano, salt, black pepper, and crushed red pepper flakes over the mixture. Pour in the chicken broth and stir until well combined. Lower the heat and let it simmer for 3-4 minutes, allowing those flavors to meld beautifully.
- Finish with cheese: Once the zucchini becomes tender and the broth reduces slightly, sprinkle the grated Parmesan cheese over the top. Stir it in until it melts and coats everything evenly.
- Taste and garnish: Taste for seasoning, adding more salt, pepper, or red pepper flakes as desired. Serve immediately, and don’t forget to garnish with extra Parmesan if you’re feeling indulgent.
