Ingredients

- 1 pound ground turkey
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for one minute.
- Stir in the ground turkey, breaking it apart, and brown it for 5-7 minutes.
- Incorporate the sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper; cook for an additional 5-7 minutes.
- Transfer the mixture to a greased baking dish, spreading evenly.
- Sprinkle shredded mozzarella cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Serve hot and enjoy!
Notes
Can be made ahead of time and stored in the refrigerator. Customize with additional vegetables or different cheeses.
