Description

A healthy and delicious ground turkey zucchini casserole that’s perfect for weeknight meals and family gatherings.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for one minute.
  4. Stir in the ground turkey, breaking it apart, and brown it for 5-7 minutes.
  5. Incorporate the sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper; cook for an additional 5-7 minutes.
  6. Transfer the mixture to a greased baking dish, spreading evenly.
  7. Sprinkle shredded mozzarella cheese on top.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  9. Serve hot and enjoy!

Notes

Can be made ahead of time and stored in the refrigerator. Customize with additional vegetables or different cheeses.
