Description

A flavorful blend of turkey meatballs served over quinoa with fresh salad and creamy tzatziki, bringing the Mediterranean to your table.


Ingredients

  • 1 lb ground turkey (Lean (93/7) works best.)
  • 1/4 cup panko breadcrumbs (Or standard unseasoned breadcrumbs.)
  • 1 large egg (Lightly beaten.)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (For pan-searing.)
  • 1 cup dry quinoa (Rinsed well.)
  • 2 cups water (Or light chicken broth.)
  • 4 cups fresh mixed salad greens
  • 1 cup cherry tomatoes (Halved.)
  • 2 Persian cucumbers (Diced.)
  • 1/4 cup raw red onion (Cut into thin slivers.)
  • 1/2 cup feta cheese (Crumbled.)
  • 1/2 cup Kalamata olives (Pitted.)
  • 1/2 cup tzatziki sauce (Thick and creamy.)
  • 2 tbsp fresh dill (Finely minced.)

Instructions

  1. Preheat your skillet over medium heat and add olive oil. While it warms, mix ground turkey, panko breadcrumbs, egg, oregano, garlic powder, salt, and pepper in a mixing bowl.
  2. Shape the mixture into 1 1/2-inch meatballs. Once the oil is shimmering, carefully place the meatballs in the skillet.
  3. Sear until each side is beautifully golden, roughly 4-5 minutes per side.
  4. Cook quinoa: Rinse quinoa and combine it with water or chicken broth in a medium saucepan. Bring to a boil, then reduce heat and simmer covered for about 15 minutes.
  5. Prepare fresh ingredients by chopping your vegetables.
  6. Assembly time: Layer your bowls starting with quinoa, then salad greens, turkey meatballs, and top with vegetables, feta, olives, and tzatziki.
  7. Serve immediately for the best experience!

Notes

You can prepare the meatballs and tzatziki sauce a day in advance. Store them in the refrigerator. For an air fryer alternative, cook meatballs at 375°F for about 12-15 minutes.
