- 1 lb ground turkey (Lean (93/7) works best.)
- 1/4 cup panko breadcrumbs (Or standard unseasoned breadcrumbs.)
- 1 large egg (Lightly beaten.)
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (For pan-searing.)
- 1 cup dry quinoa (Rinsed well.)
- 2 cups water (Or light chicken broth.)
- 4 cups fresh mixed salad greens
- 1 cup cherry tomatoes (Halved.)
- 2 Persian cucumbers (Diced.)
- 1/4 cup raw red onion (Cut into thin slivers.)
- 1/2 cup feta cheese (Crumbled.)
- 1/2 cup Kalamata olives (Pitted.)
- 1/2 cup tzatziki sauce (Thick and creamy.)
- 2 tbsp fresh dill (Finely minced.)
Instructions
- Preheat your skillet over medium heat and add olive oil. While it warms, mix ground turkey, panko breadcrumbs, egg, oregano, garlic powder, salt, and pepper in a mixing bowl.
- Shape the mixture into 1 1/2-inch meatballs. Once the oil is shimmering, carefully place the meatballs in the skillet.
- Sear until each side is beautifully golden, roughly 4-5 minutes per side.
- Cook quinoa: Rinse quinoa and combine it with water or chicken broth in a medium saucepan. Bring to a boil, then reduce heat and simmer covered for about 15 minutes.
- Prepare fresh ingredients by chopping your vegetables.
- Assembly time: Layer your bowls starting with quinoa, then salad greens, turkey meatballs, and top with vegetables, feta, olives, and tzatziki.
- Serve immediately for the best experience!
Notes
You can prepare the meatballs and tzatziki sauce a day in advance. Store them in the refrigerator. For an air fryer alternative, cook meatballs at 375°F for about 12-15 minutes.
