Instructions
- Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until smooth. Add the chicken breasts, ensuring they are well coated. Cover and let marinate in the fridge for at least 30 minutes, or overnight.
- Sear the Chicken: Heat a skillet over medium-high heat and drizzle in a touch of olive oil. Once hot, add the marinated chicken. Sear for about 6-7 minutes on one side until nicely browned, then flip and cook for another 5-6 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Add Feta: In the last few minutes of cooking, sprinkle the crumbled feta on top of the chicken. Allow it to soften slightly as it heats, infusing the chicken with its creamy goodness.
- Garnish and Serve: Remove the chicken from the skillet and let it rest for a few minutes. Garnish with fresh parsley before slicing and serving.
