  • 1/2 Lemon (juiced)
  • 2 tbsp Water
  • 1/2 cup Gluten-Free Flour Blend
  • 2 tbsp Granulated Sugar
  • 2 tbsp Brown Sugar
  • 4 tbsp Butter (Very Softened, but not melted)
  • 1 cup Confectioners Sugar
  • 1 tbsp Milk

Instructions

  1. Prepare the Pizza Crust: In a small bowl, whisk together the melted butter, sugar, and cinnamon until well blended. Using a pastry brush, spread this mixture evenly across the Schar Gluten Free Pizza Crust.
  2. Make the Raspberry Filling: In a saucepan over low heat, combine the fresh raspberries, sugar, cornstarch, lemon juice, and water. Stir gently as the berries begin to break down and release their juices. Simmer until the mixture reaches a jammy consistency, about 5–8 minutes.
  3. Spread the Jam: Once your raspberry jam is ready, spread it generously across the crust.
  4. Create the Crumble: In a separate bowl, mix together the gluten-free flour, granulated sugar, brown sugar, and softened butter. Combine until the mixture resembles coarse crumbs.
  5. Bake: Place the raspberry-covered pizza on a baking tray and transfer it to a preheated oven at 400°F. Bake for approximately 8 minutes, or until the crust and crumble turn golden brown.
  6. Make the Creamy Frosting: Let the pizza cool for about 10 minutes. In a small bowl, whisk the confectioners sugar and milk until smooth.
  7. Drizzle: Once cooled, drizzle the creamy frosting across the pizza and slice it into generous pieces.
