- 4 cups peaches, peeled and sliced
- 1 tablespoon lemon juice
- 1/2 cup almond flour
- 1/2 cup gluten-free oats
- 1/4 cup coconut sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the peaches with lemon juice in a bowl and let sit.
- Whisk together almond flour, gluten-free oats, coconut sugar, cinnamon, and salt in a separate bowl.
- Pour in melted coconut oil and honey or maple syrup, mixing until crumbly.
- Press half of the crumble into the bottom of a greased 8 inch baking dish.
- Layer the peach mixture evenly over the crust.
- Sprinkle the remaining crumble over the peaches.
- Bake for 30-35 minutes until golden brown.
- Cool for at least 15 minutes before cutting.
