Delight in these gluten-free peach crumble bars featuring juicy peaches and a crunchy topping perfect for summer gatherings.


Ingredients

  • 4 cups peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1/2 cup almond flour
  • 1/2 cup gluten-free oats
  • 1/4 cup coconut sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the peaches with lemon juice in a bowl and let sit.
  3. Whisk together almond flour, gluten-free oats, coconut sugar, cinnamon, and salt in a separate bowl.
  4. Pour in melted coconut oil and honey or maple syrup, mixing until crumbly.
  5. Press half of the crumble into the bottom of a greased 8 inch baking dish.
  6. Layer the peach mixture evenly over the crust.
  7. Sprinkle the remaining crumble over the peaches.
  8. Bake for 30-35 minutes until golden brown.
  9. Cool for at least 15 minutes before cutting.

Notes

These bars store well and can be made a day in advance. Try adding nuts or berries for a twist!
