- 1/4 cup cornstarch
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease your 8×8-inch baking dish.
- In a bowl, mix together almond flour, melted coconut oil, honey, and salt until combined.
- Bake the crust for about 10-12 minutes or until lightly golden.
- In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and cornstarch until smooth.
- Pour the lemon mixture over the baked crust and spread it evenly.
- Return to the oven and bake for an additional 20-25 minutes or until the filling is set.
- Allow to cool completely, then refrigerate for at least 2 hours before slicing.
- Dust with powdered sugar before serving.
