Ingredients

  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 3/4 cup lemon juice (freshly squeezed)
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup cornstarch
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 8×8-inch baking dish.
  2. In a bowl, mix together almond flour, melted coconut oil, honey, and salt until combined.
  3. Bake the crust for about 10-12 minutes or until lightly golden.
  4. In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and cornstarch until smooth.
  5. Pour the lemon mixture over the baked crust and spread it evenly.
  6. Return to the oven and bake for an additional 20-25 minutes or until the filling is set.
  7. Allow to cool completely, then refrigerate for at least 2 hours before slicing.
  8. Dust with powdered sugar before serving.
