Ingredients

- 2 cups cooked gluten-free rice
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons gluten-free soy sauce
- 2 tablespoons sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Sauté mixed vegetables for about 3–4 minutes until tender.
- Push the veggies to one side and pour in the beaten eggs, scrambling until fully cooked.
- Stir in the diced chicken and cooked rice, mixing well.
- Add gluten-free soy sauce and stir-fry for a few minutes.
- Season with salt and pepper, and garnish with chopped green onions before serving.
Notes
For a lighter texture, use leftover rice. Feel free to customize with your favorite vegetables or proteins.
