Description

Delightful gluten-free cookies made with ripe bananas and nut butter, offering a chewy texture with crispy edges.

Ingredients

Scale
  • 2 ripe bananas
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour blend
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a medium bowl until smooth.
  3. Add the peanut butter, honey, and vanilla extract to the mashed bananas and mix until creamy.
  4. Whisk together the gluten-free flour, baking soda, baking powder, and salt in a separate bowl.
  5. Fold the dry mixture into the wet mixture gently until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them out.
  7. Bake for 10-12 minutes, until the edges are golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Use very ripe bananas for optimal sweetness and texture. You can chill the dough before baking to prevent spreading.
