Description
A delicious dish featuring succulent steak bites and creamy orecchiette pasta, infused with garlic and herbs.
Ingredients

- 1.5 lbs (700g) Sirloin, New York Strip, or Ribeye, cut into 1-inch cubes
- 1 tbsp Olive oil (for searing)
- 4 tbsp Unsalted butter, softened
- 3 cloves Garlic, finely minced
- 2 tbsp Fresh Italian parsley, finely chopped
- 1 tbsp Fresh chives or rosemary, finely chopped
- Salt and freshly cracked black pepper, to taste
- 8 oz (225g) Orecchiette pasta
- 2 tbsp Olive oil
- 2 cloves Garlic, thinly sliced
- 1/2 tsp Red pepper flakes
- 1/4 cup Fresh parsley, finely chopped
- 1/2 cup Pasta water (reserved before draining)
- 1/4 cup Grated Parmesan or Pecorino cheese
Instructions
- Make the Herb Butter: In a small bowl, mash together the softened butter, minced garlic, chopped parsley, and chives until smooth. Set aside.
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the orecchiette according to package instructions. Reserve 1/2 cup of pasta water and drain the pasta.
- Sear the Steak Bites: Pat the steak cubes dry, season with salt and pepper. In a skillet, heat 1 tbsp of olive oil. Add the steak bites and sear without moving for 2 minutes. Flip and sear for another 1-2 minutes. Add half of the herb butter and toss until melted. Transfer to a plate to rest.
- Toss the Pasta: In the same skillet, add 2 tbsp of olive oil over medium heat. Sauté sliced garlic and red pepper flakes for 1 minute. Add the drained pasta, remaining herb butter, chopped parsley, and 1/4 cup reserved pasta water. Stir until glossy and well-coated. Finish with cheese.
- Plate and Serve: Serve the glossy herb pasta in a bowl with steak bites beside it. Drizzle with pan juices.
Notes
Make the herb butter in advance and store in the fridge for up to a week. Feel free to add vegetables for a nutritious boost.
