- 3–4 medium Yukon Gold or Russet potatoes, cut into wedges
- 1 tsp garlic powder
- 1 tsp paprika
- 2 cups chopped Romaine or green leaf lettuce
- 1 Persian cucumber, sliced
- 1 ripe tomato, cut into wedges
- 1/4 small red onion, thinly sliced
- Salt and pepper to taste
- A squeeze of fresh lemon juice
- A pinch of dried oregano
Instructions
- Prepare the lamb chops: Pat the lamb chops dry and season with salt, pepper, minced garlic, and rosemary. Let sit for 15-20 minutes.
- Cook the lamb chops: Heat a tablespoon of olive oil in a skillet and sear the lamb for 3-4 minutes on each side until golden. Let rest for 5 minutes.
- Make the herb sauce: Whisk together parsley, mint, grated garlic, olive oil, lemon juice, and red pepper flakes.
- Prepare the crispy potato wedges: Preheat oven to 400°F. Parboil potatoes for 5 minutes, then toss with oil and seasonings, and roast for 30-35 minutes.
- Assemble the garden salad: Toss lettuce, cucumber, tomato, and onion with olive oil, lemon juice, salt, and oregano.
- Plating: Serve crispy potato wedges, garden salad, and lamb chops drizzled with herb sauce on a plate.
