  • 34 medium Yukon Gold or Russet potatoes, cut into wedges
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 cups chopped Romaine or green leaf lettuce
  • 1 Persian cucumber, sliced
  • 1 ripe tomato, cut into wedges
  • 1/4 small red onion, thinly sliced
  • Salt and pepper to taste
  • A squeeze of fresh lemon juice
  • A pinch of dried oregano

Instructions

  1. Prepare the lamb chops: Pat the lamb chops dry and season with salt, pepper, minced garlic, and rosemary. Let sit for 15-20 minutes.
  2. Cook the lamb chops: Heat a tablespoon of olive oil in a skillet and sear the lamb for 3-4 minutes on each side until golden. Let rest for 5 minutes.
  3. Make the herb sauce: Whisk together parsley, mint, grated garlic, olive oil, lemon juice, and red pepper flakes.
