- 3 boneless, skinless chicken breasts
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning (or fresh thyme)
- Fresh parsley, chopped (for garnish)
- 4 large Yukon Gold potatoes, peeled and cubed
- 4 tbsp unsalted butter
- 1/2 cup milk
- Salt and pepper to taste
- 1/2 lb fresh green beans, trimmed
- 1 tbsp butter
- Salt and a squeeze of lemon juice
Instructions
- Make the Mashed Potatoes: Place cubed potatoes in salted water. Boil for 15-20 minutes until fork-tender, then drain and mash with butter and milk. Season with salt and pepper.
- Prepare the Green Beans: Blanch green beans in boiling water for 3-5 minutes, then toss with butter, salt, and lemon juice.
- Sear the Chicken: Season chicken with paprika, garlic powder, salt, and pepper. Sear in olive oil over medium-high heat for 5-7 minutes per side until golden brown, then set aside.
- Create the Garlic Herb Sauce: In the same skillet, sauté garlic, then add chicken broth and simmer. Stir in heavy cream and Italian seasoning, followed by grated Parmesan until smooth.
- Assemble the Plate: Return chicken to the skillet, coat with sauce, and serve with mashed potatoes and green beans. Garnish with fresh parsley.
Notes
You can use chicken thighs for a richer flavor. This dish also pairs well with crusty bread or a light salad.
