- 4 large potatoes, peeled and quartered
- 1/2 cup milk
- 1/4 cup butter
- 4 carrots, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter (for glazing carrots)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil over medium heat in a large skillet.
- Season the chicken breasts with minced garlic, dried herbs, salt, and pepper.
- Cook the chicken in the skillet for about 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for about 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Boil the quartered potatoes in a pot of water until tender, drain, and return to the pot.
- Mash the potatoes with milk, butter, salt, and pepper until creamy.
- Melt the butter in another skillet, add the sliced carrots, and sprinkle with brown sugar.
- Cook the carrots until tender and glazed, about 7-10 minutes.
- Plate the chicken alongside the creamy mashed potatoes and glazed carrots.
Notes
For enhanced flavor, marinate the chicken overnight in garlic and herbs. Use a meat thermometer to ensure chicken is cooked through.
