  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried herbs (such as thyme, rosemary, or Italian seasoning)
  • Salt and pepper, to taste
  • 4 large potatoes, peeled and quartered
  • 1/2 cup milk
  • 1/4 cup butter
  • 4 carrots, sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon butter (for glazing carrots)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil over medium heat in a large skillet.
  3. Season the chicken breasts with minced garlic, dried herbs, salt, and pepper.
  4. Cook the chicken in the skillet for about 4-5 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake for about 20-25 minutes until the internal temperature reaches 165°F (75°C).
  6. Boil the quartered potatoes in a pot of water until tender, drain, and return to the pot.
  7. Mash the potatoes with milk, butter, salt, and pepper until creamy.
  8. Melt the butter in another skillet, add the sliced carrots, and sprinkle with brown sugar.
  9. Cook the carrots until tender and glazed, about 7-10 minutes.
  10. Plate the chicken alongside the creamy mashed potatoes and glazed carrots.

Notes

For enhanced flavor, marinate the chicken overnight in garlic and herbs. Use a meat thermometer to ensure chicken is cooked through.
