Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Prep the steak bites by patting them dry with paper towels and seasoning generously with salt and black pepper.
  2. Sear the steak by heating olive oil in a large skillet over medium-high heat and adding the steak bites in a single layer. Sear for 1-2 minutes on each side until browned.
  3. Remove the seared steak bites from the skillet and set them aside on a plate.
  4. Melt the butter in the same skillet, lowering the heat to medium.
  5. Sauté the minced garlic in the melted butter for about 30 seconds until fragrant.
  6. Add the zucchini half-moons and sauté for 3-5 minutes until tender-crisp.
  7. Combine the seared steak bites back into the skillet, tossing gently to coat them with garlic butter. Cook for another 1-2 minutes until heated through.
  8. Garnish with fresh parsley and serve immediately.

Notes

Ensure steak is at room temperature before cooking for even results. Avoid overcrowding the skillet to achieve a perfect sear.
