  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together the flour, rolled oats, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In a medium bowl, whisk together the egg, milk, vegetable oil (or melted butter), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture. Mix gently until just combined.
  5. Fold in the chocolate chips gently, ensuring they are evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18-22 minutes or until a skewer inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be made ahead and stored in the refrigerator for up to three days. They also freeze well.
