- 1 tbsp sesame oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- 1 bag (14 oz) coleslaw mix (shredded cabbage & carrots)
- 3 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tsp sriracha or chili paste (optional)
- Salt & pepper to taste
- 2 green onions, sliced for garnish
- Sesame seeds (optional)
Instructions
- Heat the sesame oil in a large skillet or wok over medium heat until it shimmers.
- Add the diced onion and sauté for about 2-3 minutes, until softened and caramelized.
- Stir in the minced garlic and grated ginger for about 30 seconds until fragrant.
- Add the ground pork, breaking it up while it cooks until browned and fully cooked through, about 5-7 minutes.
- Toss in the coleslaw mix, stirring well and cooking for another 3-4 minutes.
- Pour in the soy sauce and rice vinegar, mixing thoroughly, and adjust seasoning with salt, pepper, and sriracha for heat.
- Garnish with sliced green onions and a sprinkle of sesame seeds.
Notes
This dish can be customized with extra vegetables like bell peppers or snap peas and can be made vegetarian using tofu or tempeh.
