Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the gluten-free flour, baking powder, and pinch of salt in a small bowl.
- Mash the coconut oil or vegan butter until creamy, then blend in the maple syrup and vanilla extract.
- Add the dry mixture to the wet ingredients, stirring slowly until just combined.
- Gently fold in the fresh blueberries.
- Transfer the mixture to a small baking dish, spreading evenly.
- Sprinkle rolled oats on top if using.
- Bake for 20-25 minutes or until golden brown and bubbly.
- Let cool slightly before serving.
