Ingredients

  • 4 slices bacon
  • 1 onion, chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1/4 cup vegetable oil

  • Chives for garnish (optional)

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender, then drain and cool slightly before cutting into cubes.
  2. Cook the bacon in a skillet over medium heat until crispy, then chop and reserve the drippings.
  3. Caramelize the chopped onions in the reserved drippings for 5-7 minutes until golden brown.
  4. Whisk together the apple cider vinegar, sugar, and vegetable oil until blended, then add onions and bacon.
  5. Combine the cubed potatoes with the dressing, seasoning generously with salt and pepper, and serve warm, garnished with chives if desired.

Notes
