Description

A rich and fudgy flourless chocolate cake that melts in your mouth, topped with a glossy ganache.


Ingredients

  • 1 cup chocolate chips
  • 1/2 cup unsalted butter
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup cocoa powder
  • 1 cup heavy cream (for ganache)
  • 1 cup chocolate chips (for ganache)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your 9-inch round cake pan.
  2. Place the chocolate chips and butter in a medium saucepan over low heat. Stir until melted.
  3. Remove from heat and fold in the sugar, salt, and vanilla extract.
  4. Crack the eggs one by one into the mixture, stirring well after each addition.
  5. Sift in the cocoa powder and stir just until combined.
  6. Pour the batter into the prepared cake pan.
  7. Bake for about 25 minutes.
  8. Allow the cake to cool for 10 minutes before transferring it to a cooling rack.
  9. Heat the heavy cream in a small saucepan until simmering and pour over the chocolate chips in a bowl, stirring until smooth.
  10. Pour the ganache over the cooled cake before serving.

Notes

For a dairy-free option, substitute coconut oil for butter and use dairy-free chocolate chips. This cake tastes even better the day after it’s made.
