  • 1 Large Egg, whisked
  • 1/2 cup Cornstarch
  • 1/4 cup All-Purpose Flour
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Paprika
  • Vegetable Oil for Frying
  • 2 Green Onions, finely sliced
  • 1/2 cup Mayonnaise
  • 3 tbsp Sriracha
  • 2 tbsp Sweet Chili Sauce
  • 1 tsp Honey or Sugar
  • 1 tsp Rice Vinegar (optional)

Instructions

  1. Create the Dynamite Sauce: In a small bowl, whisk together mayonnaise, Sriracha, sweet chili sauce, honey, and optional rice vinegar until smooth and creamy. Set aside to let the flavors meld beautifully.
  2. Prepare the Shrimp: Start by patting the shrimp dry with paper towels to remove excess moisture. In one bowl, pour the whisked egg. In another shallow bowl, combine cornstarch, flour, salt, black pepper, garlic powder, and paprika. Dip each shrimp into the egg wash, ensuring it’s fully coated, then roll it in the flour/starch mixture to achieve an even crust.
  3. Heat the Oil: In a heavy pot, heat vegetable oil to 350°F (175°C). Carefully check the temperature with a thermometer, as maintaining this temperature ensures perfect frying.
  4. Fry the Shrimp: Fry the shrimp in small batches for 2-3 minutes, or until they turn a gorgeous golden brown. Avoid overcrowding the pot to keep the oil temperature consistent.
  5. Drain and Toss: Once fried, drain the shrimp on a cooling rack or paper towels. While still hot, toss them in a large bowl with the Dynamite Sauce until each shrimp is beautifully glazed.
  6. Finish and Serve: Transfer the coated shrimp to a serving bowl, drizzle with extra Sriracha for an added kick, and sprinkle with finely sliced green onions for a fresh finish.
