  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup espresso or strong coffee
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking soda, and salt in a large bowl until combined.
  3. Mix the melted butter, granulated sugar, and brown sugar in a separate bowl until creamy. Stir in the espresso, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the chocolate chips gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

To make ahead, prepare the batter the night before and store it in the fridge. You can also use dark chocolate chips for a richer flavor.
