- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, cocoa powder, baking soda, and salt in a large bowl until combined.
- Mix the melted butter, granulated sugar, and brown sugar in a separate bowl until creamy. Stir in the espresso, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chocolate chips gently.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
To make ahead, prepare the batter the night before and store it in the fridge. You can also use dark chocolate chips for a richer flavor.
