- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 large egg
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
- Combine the granulated sugar, brown sugar, milk, vegetable oil, vanilla extract, and egg in another bowl and stir until well blended.
- Combine the dry ingredients with the wet ingredients, folding gently until just combined.
- Prepare the cream cheese filling by beating the softened cream cheese with powdered sugar until smooth.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, and then cover with more batter.
- Top each muffin with a sprinkle of chocolate chips.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
