Description

Ingredients

  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Combine the granulated sugar, brown sugar, milk, vegetable oil, vanilla extract, and egg in another bowl and stir until well blended.
  4. Combine the dry ingredients with the wet ingredients, folding gently until just combined.
  5. Prepare the cream cheese filling by beating the softened cream cheese with powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, and then cover with more batter.
  7. Top each muffin with a sprinkle of chocolate chips.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack.
