Ingredients

  • 220g Pasta (spaghetti, fettuccine, or penne)
  • 150g Fresh Spinach
  • 200g Ripe Tomatoes (cherry or Roma)
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive Oil
  • 50g Parmesan Cheese (grated)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add your chosen pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté Aromatics: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
  3. Add Tomatoes: Toss in diced tomatoes, stirring to coat in the garlicky oil. Let them cook down for about 5-7 minutes until they soften and their juices begin to create a sauce.
  4. Incorporate Spinach: Add in the fresh spinach, stirring it until wilted down, which will take just a couple of minutes.
  5. Mix Noodles and Sauce: Once the pasta is ready, add it straight to the skillet with the tomato and spinach mixture. If the sauce needs a little moisture, slowly add reserved pasta water until you reach the desired consistency.
  6. Cheese and Season: Remove from heat, sprinkle generously with grated Parmesan, and season with salt and pepper to taste. Toss everything together until thoroughly mixed.
  7. Serve: Divide the pasta among plates and top with extra cheese if you desire. Dive in and enjoy!

Notes

For a low-carb alternative, substitute pasta with zoodles (zucchini noodles).
