- 220g Pasta (spaghetti, fettuccine, or penne)
- 150g Fresh Spinach
- 200g Ripe Tomatoes (cherry or Roma)
- 3 cloves Garlic (minced)
- 2 tbsp Olive Oil
- 50g Parmesan Cheese (grated)
Instructions
- Cook the Pasta: Bring a large pot of salted water to boil. Add your chosen pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
- Sauté Aromatics: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
- Add Tomatoes: Toss in diced tomatoes, stirring to coat in the garlicky oil. Let them cook down for about 5-7 minutes until they soften and their juices begin to create a sauce.
- Incorporate Spinach: Add in the fresh spinach, stirring it until wilted down, which will take just a couple of minutes.
- Mix Noodles and Sauce: Once the pasta is ready, add it straight to the skillet with the tomato and spinach mixture. If the sauce needs a little moisture, slowly add reserved pasta water until you reach the desired consistency.
- Cheese and Season: Remove from heat, sprinkle generously with grated Parmesan, and season with salt and pepper to taste. Toss everything together until thoroughly mixed.
- Serve: Divide the pasta among plates and top with extra cheese if you desire. Dive in and enjoy!
