Description

A light and refreshing salad combining crisp cucumbers, creamy mozzarella, and juicy tomatoes, drizzled with olive oil and balsamic glaze.


Ingredients

Scale
  • 2 English Cucumbers
  • 8 oz Fresh Mozzarella Cheese
  • 2 cups Ripe Tomatoes (heirloom or cherry)
  • 1/2 cup Fresh Basil Leaves
  • 2 tbsp Balsamic Glaze
  • 2 tbsp Olive Oil
  • Salt & Pepper to taste

Instructions

  1. Slice the cucumbers, fresh mozzarella, and tomatoes into even pieces, about 1/4 inch thick.
  2. Layer the cucumber slices, mozzarella, and tomato slices in a large mixing bowl.
  3. Tuck fresh basil leaves between the layers.
  4. Drizzle with olive oil and balsamic glaze for an even coating.
  5. Season with a pinch of salt and a grind of fresh pepper to taste.
  6. Serve immediately for the best flavor and texture.

Notes

For best results, prepare ingredients up to 2 hours ahead but layer and drizzle just before serving. Avoid soggy cucumbers by patting them dry before slicing.
