- 2 English Cucumbers
- 8 oz Fresh Mozzarella Cheese
- 2 cups Ripe Tomatoes (heirloom or cherry)
- 1/2 cup Fresh Basil Leaves
- 2 tbsp Balsamic Glaze
- 2 tbsp Olive Oil
- Salt & Pepper to taste
Instructions
- Slice the cucumbers, fresh mozzarella, and tomatoes into even pieces, about 1/4 inch thick.
- Layer the cucumber slices, mozzarella, and tomato slices in a large mixing bowl.
- Tuck fresh basil leaves between the layers.
- Drizzle with olive oil and balsamic glaze for an even coating.
- Season with a pinch of salt and a grind of fresh pepper to taste.
- Serve immediately for the best flavor and texture.
Notes
For best results, prepare ingredients up to 2 hours ahead but layer and drizzle just before serving. Avoid soggy cucumbers by patting them dry before slicing.
