- 2 cups cooked rice (preferably day-old)
- 2 cups frozen mixed vegetables
- 4 cloves garlic (minced)
- 1/4 cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 green onions (chopped for garnish)
Instructions
- Prepare the chicken by chopping the chicken breasts into bite-sized pieces.
- Mix in the crockpot combining the chicken, minced garlic, and frozen mixed vegetables.
- Add the low-sodium soy sauce and sesame oil over the top.
- Stir gently using a spatula to ensure even coating.
- Cover and set the crockpot to low for 4-6 hours or high for 2-3 hours.
- Add the cooked rice about 30 minutes before serving.
- Garnish with chopped green onions and serve hot.
