- 2 pounds boneless, skinless chicken thighs
- 3 cups broccoli florets
- 1 cup uncooked long-grain white rice
- 2 cups shredded sharp cheddar cheese
- 3 cups low-sodium chicken broth
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
Instructions
- Pat the chicken dry with paper towels.
- Toss the chicken thighs with flour, salt, and pepper.
- Pour the chicken broth into the crockpot.
- Spread the uncooked rice evenly on top of the broth.
- Place the floured chicken thighs on top.
- Cover with chopped onion and minced garlic.
- Secure the lid and cook on low for 3 to 4 hours.
- Add the broccoli and cheese 30 minutes before serving.
- Final adjustments with salt and pepper, and serve.
