Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 cups broccoli florets
  • 1 cup uncooked long-grain white rice
  • 2 cups shredded sharp cheddar cheese
  • 3 cups low-sodium chicken broth
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Pat the chicken dry with paper towels.
  2. Toss the chicken thighs with flour, salt, and pepper.
  3. Pour the chicken broth into the crockpot.
  4. Spread the uncooked rice evenly on top of the broth.
  5. Place the floured chicken thighs on top.
  6. Cover with chopped onion and minced garlic.
  7. Secure the lid and cook on low for 3 to 4 hours.
  8. Add the broccoli and cheese 30 minutes before serving.
  9. Final adjustments with salt and pepper, and serve.

Notes

You can prepare the chicken and chop vegetables the night before for quicker preparation. Add your favorite vegetables for customization.
