Ingredients

  • 2 cups dried navy beans
  • 1 onion, diced
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup molasses
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 cups water
  • 1 tablespoon mustard
  • 1/2 cup bacon, cooked and crumbled (optional)

Instructions

  1. Rinse the dried navy beans under cold water until clear. Soak them overnight in plenty of water.
  2. Combine the soaked beans, diced onion, brown sugar, ketchup, molasses, salt, pepper, mustard, and crumbled bacon (if using) in your crockpot.
  3. Add 5 cups of water, ensuring each bean is submerged.
  4. Stir the mixture to achieve an even distribution.
  5. Cover and cook on low for 8-10 hours until the beans are soft and flavorful.
  6. Taste and adjust the seasoning before serving warm.

Notes

For a vegetarian version, omit the bacon and consider using smoked paprika for flavor.
