- 2 large chicken breasts (sliced horizontally into thin cutlets and pounded even)
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup Panko breadcrumbs
- 1/2 cup Parmesan cheese (finely grated)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and freshly ground black pepper to taste
- High-smoke point oil (like canola, avocado, or vegetable oil for shallow frying)
- 4 tbsp unsalted butter
- 3 cloves garlic (minced)
- Juice of 1 large lemon (plus extra wedges for serving)
- 1/4 cup low-sodium chicken broth
- 2 tbsp fresh parsley (finely chopped)
- 2 tbsp Feta cheese or Cotija cheese (crumbled)
Instructions
- Set up your breading station: Arrange three shallow bowls. In the first, combine flour with a pinch of salt and pepper. Pour beaten eggs into the second bowl. In the third, mix Panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
- Pat dry the chicken cutlets. Bread the cutlets starting with the flour, then dip into the beaten eggs, and press into the Panko-Parmesan mixture.
- Heat about 1/4 inch of oil in your skillet over medium-high heat. Carefully place the breaded cutlets into the pan and fry for 3-4 minutes on each side until golden brown.
- Transfer them to a wire rack to drain excess oil for about 2 minutes.
- In a separate pan, melt 1 tablespoon of butter over medium heat. Add minced garlic, then chicken broth and lemon juice, and let it simmer until reduced by half.
- Whisk in the remaining butter until the sauce is glossy and slightly thickened.
- Pour the sauce onto a serving platter and arrange the chicken on top. Sprinkle with fresh parsley and crumbled cheese.

For a healthier option, consider using an air fryer or baking the cutlets. Customize with spices or toppings for extra flavor.
