Description

Tender chicken cutlets coated in a crunchy lemon garlic batter, fried to golden perfection and drizzled with a luscious butter sauce.

  • 2 large chicken breasts (sliced horizontally into thin cutlets and pounded even)
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup Panko breadcrumbs
  • 1/2 cup Parmesan cheese (finely grated)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and freshly ground black pepper to taste
  • High-smoke point oil (like canola, avocado, or vegetable oil for shallow frying)
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • Juice of 1 large lemon (plus extra wedges for serving)
  • 1/4 cup low-sodium chicken broth
  • 2 tbsp fresh parsley (finely chopped)
  • 2 tbsp Feta cheese or Cotija cheese (crumbled)

Instructions

  1. Set up your breading station: Arrange three shallow bowls. In the first, combine flour with a pinch of salt and pepper. Pour beaten eggs into the second bowl. In the third, mix Panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
  2. Pat dry the chicken cutlets. Bread the cutlets starting with the flour, then dip into the beaten eggs, and press into the Panko-Parmesan mixture.
  3. Heat about 1/4 inch of oil in your skillet over medium-high heat. Carefully place the breaded cutlets into the pan and fry for 3-4 minutes on each side until golden brown.
  4. Transfer them to a wire rack to drain excess oil for about 2 minutes.
  5. In a separate pan, melt 1 tablespoon of butter over medium heat. Add minced garlic, then chicken broth and lemon juice, and let it simmer until reduced by half.
  6. Whisk in the remaining butter until the sauce is glossy and slightly thickened.
  7. Pour the sauce onto a serving platter and arrange the chicken on top. Sprinkle with fresh parsley and crumbled cheese.
