  • 1/4 cup coconut flour
  • 1 egg

Instructions

  1. Prepare the filling: In a bowl, mix together the softened cream cheese, fresh blueberries, and your chosen sweetener until smooth and creamy.
  2. Make the dough: In another bowl, blend the almond flour, coconut flour, baking powder, egg, and vanilla extract until a soft dough forms.
  3. Roll out the dough into thin sheets on a lightly floured surface, aiming for 1/4-inch thickness.
  4. Assemble the roll-ups by placing a spoonful of the blueberry mixture at one end of each rectangle and rolling it up carefully.
  5. Heat the butter in a frying pan over medium heat until it sizzles.
