Description

Crispy Herb & Mozzarella Chicken Cutlets are golden-brown cutlets with a crunchy Panko crust, tender chicken, and melted mozzarella cheese, perfect for any occasion.


Ingredients

  • 4 thin-cut chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and freshly cracked black pepper
  • Vegetable or olive oil for shallow frying
  • 4 thick slices of fresh mozzarella cheese
  • 1 lemon, thinly sliced into wheels
  • Fresh basil leaves for garnish
  • Red pepper flakes
  • 1 cup fresh Italian parsley and/or basil, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp red wine vinegar or lemon juice
  • 1/4 cup good quality extra virgin olive oil
  • 1/4 cup balsamic glaze
  • 2 tbsp extra virgin olive oil for frying

Instructions

  1. Make the Herb Sauce & Dipping Oil: In a small bowl, combine the finely chopped herbs, minced garlic, vinegar or lemon juice, and olive oil. Season this mix with salt and red pepper flakes.
  2. Set up your dredging station with three shallow bowls. In the first, combine flour seasoned with salt and pepper. In the second, pour in your beaten eggs, and in the third, mix the Panko breadcrumbs with Parmesan cheese and garlic powder.
  3. Pat the chicken cutlets dry with a paper towel, dredging in flour, then dipping into egg, and pressing into the Panko-Parmesan mixture.
  4. Heat about 1/4 inch of oil in your large skillet over medium-high heat. Carefully add the chicken cutlets without overcrowding the pan.
  5. Fry for about 3–4 minutes per side until deep golden brown and crispy. Drain on paper towels.
  6. Place a thick slice of mozzarella atop each cutlet, allowing it to melt from the heat. Optionally, broil for extra meltiness.
  7. Arrange the chicken cutlets on a serving platter, topping each with a lemon wheel and drizzling with herb sauce. Garnish with basil and red pepper flakes, serving with balsamic dipping sauce on the side.

Notes

Make-ahead by prepping the herb sauce and breading the chicken the day before. You can also bake or air fry cutlets for a healthier option.
