  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups panko breadcrumbs
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Vegetable oil, for shallow frying
  • Fresh parsley, finely chopped (for garnish)
  • 3 large russet potatoes, cut into batons
  • 1 tbsp vegetable oil (for fries)
  • 2 cups loose lettuce leaves
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tbsp sour cream
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp lemon juice

Instructions

  1. Prepare the Fries: Toss potato batons with 1 tablespoon of vegetable oil, 1 teaspoon of paprika, and a generous pinch of salt. Spread them on a baking sheet in a single layer. Bake in a preheated oven at 200°C (390°F) for 25 minutes or air-fry at 190°C for 18-20 minutes until golden and crisp.
  2. Set Up the Breading Station: In the first bowl, whisk together flour, salt, and pepper. Beat eggs in the second bowl. In the third bowl, combine panko breadcrumbs with remaining paprika and garlic powder.
  3. Bread the Chicken: Coat each chicken strip in the flour mixture, then dip in the egg, and roll in the panko mixture, pressing to ensure a generous coating.
  4. Fry the Chicken: Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry chicken strips for 4-5 minutes on each side until golden brown and the internal temperature reaches 74°C (165°F).
  5. Make the Garlic Herb Sauce: Whisk together mayonnaise, sour cream, minced garlic, chopped parsley, and lemon juice until smooth.
  6. Plate and Serve: Arrange crispy chicken, seasoned fries, and fresh salad veggies on a platter. Garnish with parsley and serve with the garlic herb sauce.

Notes

You can make the garlic herb sauce vegan by using plant-based mayo and sour cream.
Consider marinating chicken strips the night before for more flavor.
