- 3 large russet potatoes, cut into batons
- 1 tbsp vegetable oil (for fries)
- 2 cups loose lettuce leaves
- 1 cucumber, sliced
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup mayonnaise
- 1 tbsp sour cream
- 1 clove garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp lemon juice
Instructions
- Prepare the Fries: Toss potato batons with 1 tablespoon of vegetable oil, 1 teaspoon of paprika, and a generous pinch of salt. Spread them on a baking sheet in a single layer. Bake in a preheated oven at 200°C (390°F) for 25 minutes or air-fry at 190°C for 18-20 minutes until golden and crisp.
- Set Up the Breading Station: In the first bowl, whisk together flour, salt, and pepper. Beat eggs in the second bowl. In the third bowl, combine panko breadcrumbs with remaining paprika and garlic powder.
- Bread the Chicken: Coat each chicken strip in the flour mixture, then dip in the egg, and roll in the panko mixture, pressing to ensure a generous coating.
- Fry the Chicken: Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry chicken strips for 4-5 minutes on each side until golden brown and the internal temperature reaches 74°C (165°F).
- Make the Garlic Herb Sauce: Whisk together mayonnaise, sour cream, minced garlic, chopped parsley, and lemon juice until smooth.
- Plate and Serve: Arrange crispy chicken, seasoned fries, and fresh salad veggies on a platter. Garnish with parsley and serve with the garlic herb sauce.
Notes
You can make the garlic herb sauce vegan by using plant-based mayo and sour cream.
Consider marinating chicken strips the night before for more flavor.
