- 2 eggs, beaten

- 3 large russet potatoes, cut into batons
- 1 tbsp vegetable oil
- 2 cups loose lettuce leaves
- 1 cucumber, sliced
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup mayonnaise
- 1 tbsp sour cream
- 1 clove garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp lemon juice
Instructions
- Preheat your oven to 200°C (390°F). Toss the potato batons with 1 tablespoon of vegetable oil, a teaspoon of paprika, and a sprinkle of salt until they’re evenly coated. Spread them out in a single layer on a baking sheet, ensuring maximum crispiness. Bake for 25 minutes, or air-fry them at 190°C for 18-20 minutes, until they’re golden and crispy.
- Set up the breading station: In the first mixing bowl, whisk together the flour, salt, and pepper. In the second bowl, beat the eggs for a luscious coating. In your third bowl, mix the panko breadcrumbs with paprika and garlic powder—the secret ingredients for flavor-packed crunch.
- Take each chicken strip and coat it in the flour mixture—make sure to shake off the excess. Next, dip it into the beaten eggs, and finally, roll it in the seasoned panko breadcrumbs. Press down gently so the breadcrumbs cling beautifully to the chicken.
- In a large skillet, heat approximately half an inch of vegetable oil over medium-high heat. Fry the chicken strips for 4-5 minutes on each side until they achieve a deep golden brown color, and ensure they reach an internal temperature of 74°C. Once they’re cooked, let them drain on paper towels.
- Whisk together the mayonnaise, sour cream, minced garlic, chopped parsley, and lemon juice in a small bowl. Once everything is ready, plate the warm chicken strips, crispy fries, and fresh salad components. Garnish the chicken with extra parsley and serve immediately with that luscious dipping sauce.
Notes
You can prep the chicken strips in advance and store them in the fridge for a few hours before cooking to save time. For a lighter option, consider using an air fryer instead of frying.
