- 8 oz (225g) linguine or fettuccine pasta
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and freshly cracked black pepper
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth (or dry white wine)
- 1/2 cup Parmesan cheese, freshly grated
- Fresh basil leaves
- Fresh Italian parsley, finely chopped
Instructions
- Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Cook the pasta until just al dente, usually 8-10 minutes. Reserve 1/2 cup of the pasta water, then drain.
- Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Season shrimp and sear for 2 minutes each side until pink. Set aside.
- Sauté Aromatics: In the same skillet, melt butter, then add minced garlic and sun-dried tomatoes. Sauté for about 1 minute.
- Deglaze the Pan: Pour in chicken broth and simmer until reduced by half (2-3 minutes).
- Add Cream and Cheese: Reduce heat, stir in cream, and simmer until thickened. Gradually add Parmesan cheese until smooth.
- Combine Pasta and Shrimp: Return pasta and shrimp to skillet, toss gently to coat. Use reserved pasta water for desired consistency.
- Garnish and Serve: Top with fresh basil and parsley. Serve immediately.
Notes
Make the sauce in advance and store it in the fridge for up to 2 days. Use an air fryer for crispy shrimp or bake in a casserole dish for a baked version.
