Description

A luxurious escape to Italy with luscious shrimp in a silky, creamy sauce, complemented by sun-dried tomatoes and fresh herbs over pasta.


Ingredients

  • 8 oz (225g) linguine or fettuccine pasta
  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and freshly cracked black pepper
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth (or dry white wine)
  • 1/2 cup Parmesan cheese, freshly grated
  • Fresh basil leaves
  • Fresh Italian parsley, finely chopped

Instructions

  1. Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Cook the pasta until just al dente, usually 8-10 minutes. Reserve 1/2 cup of the pasta water, then drain.
  2. Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Season shrimp and sear for 2 minutes each side until pink. Set aside.
  3. Sauté Aromatics: In the same skillet, melt butter, then add minced garlic and sun-dried tomatoes. Sauté for about 1 minute.
  4. Deglaze the Pan: Pour in chicken broth and simmer until reduced by half (2-3 minutes).
  5. Add Cream and Cheese: Reduce heat, stir in cream, and simmer until thickened. Gradually add Parmesan cheese until smooth.
  6. Combine Pasta and Shrimp: Return pasta and shrimp to skillet, toss gently to coat. Use reserved pasta water for desired consistency.
  7. Garnish and Serve: Top with fresh basil and parsley. Serve immediately.

Notes

Make the sauce in advance and store it in the fridge for up to 2 days. Use an air fryer for crispy shrimp or bake in a casserole dish for a baked version.
