Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat and sauté the minced garlic until fragrant—about 1 minute. Add the spinach and cook until wilted, stirring frequently.
  3. Combine the sautéed spinach, crumbled feta, cream cheese, salt, and pepper in a mixing bowl. Blend until well combined.
  4. Cut a pocket into each chicken breast with a sharp knife.
  5. Stuff each chicken breast with the creamy spinach and feta mixture.
  6. Heat more olive oil in the skillet over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to the oven and bake for 20-25 minutes, or until cooked through.
  8. If using breadcrumbs, sprinkle on top during the last 5 minutes of baking.
  9. Serve warm.
