- 2 chicken breasts
- 1 cup fresh spinach
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a skillet over medium heat and sauté the minced garlic until fragrant—about 1 minute. Add the spinach and cook until wilted, stirring frequently.
- Combine the sautéed spinach, crumbled feta, cream cheese, salt, and pepper in a mixing bowl. Blend until well combined.
- Cut a pocket into each chicken breast with a sharp knife.
- Stuff each chicken breast with the creamy spinach and feta mixture.
- Heat more olive oil in the skillet over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to the oven and bake for 20-25 minutes, or until cooked through.
- If using breadcrumbs, sprinkle on top during the last 5 minutes of baking.
- Serve warm.
