A comforting one-pot pasta dish featuring creamy sauce, ground beef, sun-dried tomatoes, and fresh spinach.

- 1 lb (450 g) ground beef (85% lean)
- 1 tbsp extra virgin olive oil
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/3 cup (50 g) sun-dried tomatoes, chopped
- 2 cups (60 g) fresh baby spinach
- 12 oz (340 g) dried penne or rigatoni pasta
- 3 cups (720 ml) beef broth
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) freshly grated Parmesan cheese
- 1 tsp dried Italian herbs (oregano, basil, thyme)
- Salt and black pepper to taste
Instructions
- Heat 1 tablespoon of olive oil over medium-high heat in a large deep skillet.
- Add 1 pound of ground beef and brown for about 8 minutes.
- Lower the heat to medium, stir in 1 finely chopped onion and 3 minced garlic cloves. Cook for about 3 minutes.
- Introduce 1/3 cup of chopped sun-dried tomatoes and 1 teaspoon of dried Italian herbs. Toast for about 2 minutes.
- Add 12 ounces of pasta, 3 cups of beef broth, and 1 cup of heavy cream. Stir to combine.
- Bring to a gentle boil, cover, and reduce heat to medium-low. Simmer for 12-15 minutes, stirring every 5 minutes.
- Fold in 2 cups of spinach and 1 cup of Parmesan cheese. Cook for another 2 minutes until cheese melts and sauce is creamy.
- Taste and adjust seasoning as needed. Serve immediately.
Notes
This dish can be made ahead of time, and it adapts well for slow cooking. Add various vegetables for customization.
