Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts generously with salt and pepper.
  3. Cook the chicken breasts undisturbed for 5-7 minutes or until golden brown. Flip and cook for another 5-7 minutes until fully cooked. Remove the chicken from the skillet.
  4. Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
  5. Pour in the heavy cream, lemon juice, and zest, stirring to combine.
  6. Add dried thyme and parsley, adjusting salt and pepper to taste. Simmer until the sauce thickens slightly.
  7. Return the chicken to the skillet, coating it in the sauce.
  8. Serve on a platter garnished with fresh herbs.

Notes

This dish can be prepared ahead of time and tastes even better after resting. Consider using chicken thighs for a richer flavor.
