A comforting dish featuring tender chicken enveloped in a creamy herb sauce, served alongside crispy roasted potatoes.

- 1 lb (450g) Baby gold potatoes, halved
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Dried oregano or thyme
- Salt and black pepper to taste
- 2 large Chicken breasts, sliced horizontally into cutlets
- 1 tbsp Olive oil
- 1 tbsp Butter
- 1 tsp Smoked paprika
- 1 tbsp Butter
- 3 cloves Garlic, minced
- 1/2 cup Chicken broth
- 3/4 cup Heavy cream
- 1/4 cup Parmesan cheese, finely grated
- 1 tsp Dijon mustard
- 2 tbsp Fresh Italian parsley, finely chopped
- Optional: 2 tbsp finely diced pickles or capers
Instructions
- Preheat your oven to 200°C (400°F).
- Toss halved potatoes with olive oil, garlic powder, oregano or thyme, salt, and black pepper.
- Arrange them in a single layer on a baking sheet.
- Roast for 25–30 minutes until crispy.
- Season the chicken cutlets with smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil and butter in a skillet over medium heat.
- Sear the chicken for 4–5 minutes per side until golden brown.
- Let the chicken rest while you prepare the sauce.
- Reduce the heat and add butter and minced garlic to the skillet.
- Sauté for about 1 minute.
- Deglaze with chicken broth and simmer until reduced by half.
- Stir in heavy cream and Dijon mustard, and let it bubble for 2–3 minutes.
- Whisk in Parmesan until melted and smooth.
- Slice the rested chicken and plate with roasted potatoes.
- Pour the creamy sauce over the top and garnish with parsley.
Notes
For make-ahead, prepare the sauce and refrigerate; reheat gently on the stove.
