Creamy Herb Chicken with Roasted Potatoes

Description

A comforting dish featuring tender chicken enveloped in a creamy herb sauce, served alongside crispy roasted potatoes.


Ingredients

  • 1 lb (450g) Baby gold potatoes, halved
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano or thyme
  • Salt and black pepper to taste
  • 2 large Chicken breasts, sliced horizontally into cutlets
  • 1 tbsp Olive oil
  • 1 tbsp Butter
  • 1 tsp Smoked paprika
  • 1 tbsp Butter
  • 3 cloves Garlic, minced
  • 1/2 cup Chicken broth
  • 3/4 cup Heavy cream
  • 1/4 cup Parmesan cheese, finely grated
  • 1 tsp Dijon mustard
  • 2 tbsp Fresh Italian parsley, finely chopped
  • Optional: 2 tbsp finely diced pickles or capers

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss halved potatoes with olive oil, garlic powder, oregano or thyme, salt, and black pepper.
  3. Arrange them in a single layer on a baking sheet.
  4. Roast for 25–30 minutes until crispy.
  5. Season the chicken cutlets with smoked paprika, garlic powder, salt, and pepper.
  6. Heat olive oil and butter in a skillet over medium heat.
  7. Sear the chicken for 4–5 minutes per side until golden brown.
  8. Let the chicken rest while you prepare the sauce.
  9. Reduce the heat and add butter and minced garlic to the skillet.
  10. Sauté for about 1 minute.
  11. Deglaze with chicken broth and simmer until reduced by half.
  12. Stir in heavy cream and Dijon mustard, and let it bubble for 2–3 minutes.
  13. Whisk in Parmesan until melted and smooth.
  14. Slice the rested chicken and plate with roasted potatoes.
  15. Pour the creamy sauce over the top and garnish with parsley.

Notes

For make-ahead, prepare the sauce and refrigerate; reheat gently on the stove.
