Ingredients

  • 4 chicken thighs
  • 1 cup heavy cream
  • 1 tablespoon mixed herbs
  • Salt and pepper to taste
  • 4 large potatoes
  • 1/4 cup butter
  • 1/2 cup milk
  • 4 cups baby carrots
  • 2 tablespoons honey
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, and mixed herbs.
  3. Sear the chicken in a skillet with olive oil over medium-high heat until golden brown, about 5-7 minutes.
  4. Add in the heavy cream and bring to a gentle simmer, then transfer to the oven and bake for about 20 minutes.
  5. Prepare the mashed potatoes by boiling quartered potatoes until tender, then mash with butter and milk.
  6. Glaze the carrots in a pot with water until tender, then stir in honey.
  7. Serve the chicken with mashed potatoes and glazed carrots, drizzling sauce over everything.

Notes

Consider making the chicken a day in advance for convenience. Use an air fryer instead of the oven if preferred.
