- 4 chicken thighs
- 1 cup heavy cream
- 1 tablespoon mixed herbs
- Salt and pepper to taste
- 4 large potatoes
- 1/4 cup butter
- 1/2 cup milk
- 4 cups baby carrots
- 2 tablespoons honey
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, and mixed herbs.
- Sear the chicken in a skillet with olive oil over medium-high heat until golden brown, about 5-7 minutes.
- Add in the heavy cream and bring to a gentle simmer, then transfer to the oven and bake for about 20 minutes.
- Prepare the mashed potatoes by boiling quartered potatoes until tender, then mash with butter and milk.
- Glaze the carrots in a pot with water until tender, then stir in honey.
- Serve the chicken with mashed potatoes and glazed carrots, drizzling sauce over everything.
Notes
Consider making the chicken a day in advance for convenience. Use an air fryer instead of the oven if preferred.
