Description
A rich and creamy gnocchi dish with fresh spinach and crumbled feta, perfect for a comforting meal.
Ingredients
Scale
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the gnocchi: Bring a large pot of salted water to a boil. Add your gnocchi and cook according to package instructions until they float to the surface. This usually takes about 3 minutes. Drain and set aside.
- Sauté the garlic: In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic. Sauté for about a minute or until fragrant, making sure not to burn it.
- Cook the spinach: Add the fresh spinach to the skillet. Cook for another 2-3 minutes until it wilts and reduces in volume.
- Create the creamy sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer over medium-low heat. Stir in the crumbled feta cheese, allowing it to melt into the sauce.
- Combine everything: Add the drained gnocchi to the skillet and gently toss until everything is well combined. Season with salt and pepper to taste.
- Serve and enjoy: Spoon your creamy gnocchi into bowls, topping it with freshly grated Parmesan cheese if you wish.
Notes
Make-ahead tips: You can prepare the sauce ahead of time. For a different texture, try roasting the gnocchi in the oven after boiling.
