Description
A delightful one-pan dish featuring creamy gnocchi enveloped in a rich sauce with fresh spinach and crumbled feta cheese.
Ingredients
Scale
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the gnocchi: Bring a large pot of salted water to a boil. Add your gnocchi and cook according to package instructions until they float to the surface, about 3 minutes. Drain and set aside.
- Sauté the garlic: In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for about a minute or until fragrant.
- Cook the spinach: Add the fresh spinach to the skillet and cook for another 2-3 minutes until it wilts.
- Create the creamy sauce: Pour the heavy cream into the skillet, bring it to a gentle simmer, and stir in the crumbled feta cheese.
- Combine everything: Add the drained gnocchi to the skillet and gently toss until well combined. Season with salt and pepper.
- Serve and enjoy: Spoon your creamy gnocchi into bowls and top with freshly grated Parmesan if desired.
Notes
For a twist, add grilled chicken or seasonal vegetables. Store leftovers in an airtight container for up to 3 days.
