Description

Ingredients

  • 1 lb (450g) Sirloin, New York strip, or Ribeye steak
  • 10 oz (300g) Rotini or Fusilli pasta
  • 1 tbsp Olive oil
  • 2 tbsp Butter (divided)
  • Salt and freshly cracked black pepper (to taste)
  • 4 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Beef broth (or pasta water)
  • 1 cup Parmigiano-Reggiano (Parmesan), freshly grated
  • 1/2 cup Shredded Mozzarella or Fontina
  • 1/4 tsp Onion powder
  • 2 tbsp Fresh parsley, finely chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water to use later, then drain the pasta.
  2. Sear the Steak Bites: Pat the steak cubes dry with a paper towel and season generously with salt, pepper, and onion powder. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for about 2-3 minutes without stirring until browned. Remove the steak from the skillet and set aside.
  3. Build the Sauce: Lower the heat to medium and add the remaining tablespoon of butter to the skillet. Once melted, add the minced garlic, letting it sauté for about a minute until fragrant. Deglaze the pan with beef broth or the reserved pasta water, scraping up any delicious brown bits from the bottom. Pour in the heavy cream and let it simmer for 2-3 minutes. Gradually stir in the grated Parmesan, allowing it to melt and create a creamy sauce.
  4. Combine and Serve: Toss the cooked pasta into the sauce, ensuring every noodle is well-coated. Return the steak bites along with any juices to the skillet, stirring gently to combine. Spread the shredded mozzarella or Fontina on top, covering the pasta, and let it melt for a few minutes. Finish with a sprinkle of fresh parsley and a generous crack of black pepper before serving.

Notes

Make-ahead Tips: Prepare the sauce and sear the steak in advance; simply reheat and combine with freshly cooked pasta.
