- 1 can coconut milk
- 2 cups chicken broth
- 1 tablespoon curry powder
- Juice of 1 lime

Instructions
- In a large pot, combine the shredded chicken, rice, coconut milk, chicken broth, curry powder, lime juice, salt, and pepper. Stir gently to mix everything well.
- Bring the mixture to a boil over medium-high heat. As soon as it bubbles, reduce the heat to low and cover the pot with a lid.
- Let it simmer, allowing the flavors to meld together and the rice to absorb the liquid, about 20-25 minutes. It’s advisable to stir occasionally to prevent the rice from sticking at the bottom.
- Once cooked, remove from heat and fluff the rice gently with a fork before serving.
- Serve hot, garnished with freshly chopped cilantro to add a burst of color and flavor to this charming dish.
