  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon curry powder
  • Juice of 1 lime

Instructions

  1. In a large pot, combine the shredded chicken, rice, coconut milk, chicken broth, curry powder, lime juice, salt, and pepper. Stir gently to mix everything well.
  2. Bring the mixture to a boil over medium-high heat. As soon as it bubbles, reduce the heat to low and cover the pot with a lid.
  3. Let it simmer, allowing the flavors to meld together and the rice to absorb the liquid, about 20-25 minutes. It’s advisable to stir occasionally to prevent the rice from sticking at the bottom.
