Description

A comforting one-pot meal featuring ground beef, beans, and potatoes, perfect for family gatherings or an easy dinner.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Prepare your slow cooker.
  2. Add the ground beef, breaking it up slightly with a spoon.
  3. Add the drained black beans and corn, followed by the diced potatoes, chopped onion, and minced garlic.
  4. Sprinkle in chili powder, cumin, and season with salt and pepper.
  5. Stir everything together.
  6. Cover your slow cooker with the lid.
  7. Cook on low for 6-8 hours or on high for 3-4 hours.
  8. Serve hot and enjoy!

Notes

This dish can be frozen for up to 3 months. For faster cooking, alternatively bake in the oven at 350°F (175°C) for about 45 minutes.
