- 1 pound ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Prepare your slow cooker.
- Add the ground beef, breaking it up slightly with a spoon.
- Add the drained black beans and corn, followed by the diced potatoes, chopped onion, and minced garlic.
- Sprinkle in chili powder, cumin, and season with salt and pepper.
- Stir everything together.
- Cover your slow cooker with the lid.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot and enjoy!
Notes
This dish can be frozen for up to 3 months. For faster cooking, alternatively bake in the oven at 350°F (175°C) for about 45 minutes.
