- 2 Boneless, Skinless Chicken Breasts
- 1 cup Cottage Cheese
- 1 cup Breadcrumbs (whole wheat or gluten-free)
- 1 cup Marinara Sauce
- 1/2 cup Parmesan Cheese (freshly grated)
- 1 tsp Dried Oregano
- 1 tsp Dried Basil
- Salt and Pepper to taste
Instructions
- Prepare the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper.
- Coat the chicken: Mix breadcrumbs, dried oregano, and Parmesan cheese. Dip each breast into the cottage cheese, then press into the breadcrumb mixture.
- Bake the chicken: Preheat oven to 400°F (200°C). Bake on a lined baking sheet for 20-25 minutes until crispy and registers 165°F internally.
- Warm marinara sauce in a saucepan over low heat.
- Assemble the bowls: Layer cottage cheese, chicken, and marinara in bowls, adding fresh basil on top.
- Garnish with additional Parmesan before serving warm.
Notes
For best results, marinate the chicken for a couple of hours before cooking. Customize with your favorite vegetables or cheese.
