  • 2 Boneless, Skinless Chicken Breasts
  • 1 cup Cottage Cheese
  • 1 cup Breadcrumbs (whole wheat or gluten-free)
  • 1 cup Marinara Sauce
  • 1/2 cup Parmesan Cheese (freshly grated)
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • Salt and Pepper to taste

Instructions

  1. Prepare the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Coat the chicken: Mix breadcrumbs, dried oregano, and Parmesan cheese. Dip each breast into the cottage cheese, then press into the breadcrumb mixture.
  3. Bake the chicken: Preheat oven to 400°F (200°C). Bake on a lined baking sheet for 20-25 minutes until crispy and registers 165°F internally.
  4. Warm marinara sauce in a saucepan over low heat.
  5. Assemble the bowls: Layer cottage cheese, chicken, and marinara in bowls, adding fresh basil on top.
  6. Garnish with additional Parmesan before serving warm.

Notes

For best results, marinate the chicken for a couple of hours before cooking. Customize with your favorite vegetables or cheese.
