Ingredients

  • 3 eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1/2 teaspoon baking powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend your cottage cheese in a large bowl until smooth.
  3. Separate the eggs, placing the whites in a separate bowl and whip until stiff peaks form.
  4. Add egg yolks, almond flour, baking powder, salt, and sweetener to the cottage cheese, mixing until combined.
  5. Fold in the whipped egg whites gently to retain airiness.
  6. Carefully fold in the blueberries, being cautious to avoid breaking them.
  7. Drop spoonfuls of batter onto the prepared baking sheet with space in between.
  8. Bake for 20-25 minutes until golden and set.
  9. Cool slightly before serving.

Notes

For a dairy-free option, substitute cottage cheese with cashew cream. You can also adapt the fruits or add spices to customize the flavor.
