Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend your cottage cheese in a large bowl until smooth.
- Separate the eggs, placing the whites in a separate bowl and whip until stiff peaks form.
- Add egg yolks, almond flour, baking powder, salt, and sweetener to the cottage cheese, mixing until combined.
- Fold in the whipped egg whites gently to retain airiness.
- Carefully fold in the blueberries, being cautious to avoid breaking them.
- Drop spoonfuls of batter onto the prepared baking sheet with space in between.
- Bake for 20-25 minutes until golden and set.
- Cool slightly before serving.
Notes
For a dairy-free option, substitute cottage cheese with cashew cream. You can also adapt the fruits or add spices to customize the flavor.
