Delicious homemade cinnamon raisin bagels that are soft, chewy, and bursting with flavor.
Ingredients

- 4 cups bread flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1 packet (2¼ teaspoons) active dry yeast
- 1½ cups warm water
- 1 cup raisins
- 1 tablespoon malt syrup (optional)
- Sesame seeds or everything bagel seasoning (optional)
Instructions
- Combine the warm water, active dry yeast, and sugar in a large bowl and let it sit for about 5 minutes until bubbly.
- Whisk together the bread flour, salt, and cinnamon in a separate bowl.
- Gradually add the dry mixture into the yeast mixture and stir until a rough dough forms.
- Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
- Fold in the raisins and knead until evenly distributed.
- Place the dough in a greased bowl, cover it, and let it rise until doubled in size, about 1 hour.
- Preheat your oven to 425°F (220°C).
- Boil water in a large pot and stir in malt syrup if using.
- Punch down the dough gently, divide it into 8 pieces, and shape each into a bagel.
- Boil each bagel for 1-2 minutes on each side.
- Transfer boiled bagels to a baking sheet, sprinkle with toppings if desired, and bake for 20-25 minutes until golden brown.
- Allow to cool on a wire rack before serving.
Notes
Make ahead by preparing the dough a day in advance and letting it rise slowly overnight in the fridge for improved flavor.
