Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Cook the chicken, seasoned with salt and pepper, until golden brown and fully cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- Sauté the garlic in the same skillet until fragrant, about 30 seconds.
- Add the spinach and toss until wilted.
- Incorporate the heavy cream and bring to a gentle simmer; allow to thicken slightly.
- Stir in the parmesan cheese until melted and smooth.
- Combine the sliced chicken with the sauce to coat.
- Serve over cooked pasta, garnished with extra parmesan if desired.
