Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked pasta (for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Cook the chicken, seasoned with salt and pepper, until golden brown and fully cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  3. Sauté the garlic in the same skillet until fragrant, about 30 seconds.
  4. Add the spinach and toss until wilted.
  5. Incorporate the heavy cream and bring to a gentle simmer; allow to thicken slightly.
  6. Stir in the parmesan cheese until melted and smooth.
  7. Combine the sliced chicken with the sauce to coat.
  8. Serve over cooked pasta, garnished with extra parmesan if desired.
